LESSON 07 OF 12 · Cooking Techniques
Brown mushrooms beautifully
Control moisture and pan contact for golden edges and deep, savory flavor.
YOUR KITCHEN WIN
Build a golden crust without drying out the mushrooms.
Gather: 250 g cremini mushrooms, 1 tbsp neutral cooking oil, salt, a wide stainless-steel skillet, and a spatula.
Let’s do it, step by step
Illustrative AI-generated step photos. Follow the written instructions for measurements and technique.
Dry and slice evenly
Brush away dirt or rinse briefly, then pat the mushrooms dry. Trim tough stem ends and cut into slices about 6 mm thick. Keep the pieces similar in size so they finish together.

Dry the mushrooms and cut even slices. Give them room
Warm a wide skillet over medium-high heat, add the oil, then add only enough mushrooms for one layer. Look for a steady sizzle; lower the heat if oil smokes. Cook a second batch if needed.

Spread one layer in the skillet. Let moisture escape
Leave the first side alone until golden, then turn. Mushrooms release water: let it evaporate before expecting deep browning. Adjust the heat to maintain a lively sizzle without scorching the pan.

Turn to expose golden brown surfaces. Season and finish
Once several surfaces are golden and the centers are tender, add a small pinch of salt and taste a cooled piece. Add thyme if you like. Lift out the mushrooms; the brown residue left in the pan is useful for the next lesson.

Finish with seasoning and a little thyme.
SMALL FIXES, BETTER RESULTS
If it doesn’t go to plan
The pan is full of liquid?
Let the liquid evaporate, or remove some mushrooms and work in batches next time. Adding more oil will not remove the water.
Dark edges but pale centers?
Lower the heat and give the pieces longer. Cut the next batch to a more even thickness.
One skill learned. One step forward.
Try the exercise, then mark this lesson complete when you feel ready.
