If using a Dutch oven, heat 1 tablespoon oil over medium heat. Add chopped onion, bell pepper, and a pinch of salt. Cook, stirring occasionally, until softened and beginning to brown, about 6–8 minutes. Add garlic and jalapeño (if using) and cook 1 minute more until fragrant. If you prefer a one-pot slow cooker method, skip the searing step and add raw aromatics directly to the slow cooker.
Tip: Searing builds flavor; don’t rush this step if you have time.
Stir in chili powder, cumin, smoked paprika, and oregano into the aromatics and cook 30–60 seconds to bloom the spices.
Tip: Blooming spices in fat boosts their aroma and depth.
Transfer the aromatic mixture to the slow cooker if you used a Dutch oven. Add the chicken, diced tomatoes (with juices), black beans, corn, green chiles (if using), and chicken broth. Stir to combine.
Tip: Nestle the chicken into the liquid so it cooks evenly.
Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until chicken is tender and shreds easily. Check the thickest chicken pieces reach 165°F (74°C) before shredding.
Tip: For best flavor, cook on LOW; the longer gentle heat develops deeper flavor.
Remove the chicken and shred with two forks or use an immersion blender to pulse briefly in the pot for a thicker texture. Return shredded chicken to the soup. Stir in lime juice and chopped cilantro. Adjust salt and pepper to taste.
Tip: Shred the chicken on a cutting board for cleaner shreds; reserve a few large pieces for presentation if desired.
Ladle soup into bowls and top with crushed tortilla chips or strips, sliced avocado, shredded cheese, extra cilantro, and a wedge of lime.
Tip: Add crunchy toppings at the last minute so they don’t get soggy.

Choose a recipe version below. Estimates are per recipe serving; optional ingredients, brands and preparation can change the result.
Estimated nutrition per serving · 1/6 of the defined batch
One sixth of the soup with chicken breast. Black beans: 240 g drained, approximated by cooked black beans; corn: 240 g drained. No optional chiles, cheese or avocado. Tortilla garnish excluded because its loose cup volume varies by chip/strip size; add separately.
Calculated using USDA FoodData Central reference foods. Not laboratory analysis or kitchen-tested nutrition. About the reference data.
Offer tortilla strips, avocado, cheese, sour cream, cilantro and lime separately. Add crunchy toppings just before eating.
Use mild chiles for a gentler soup or add chipotle for smoky heat. If the soup is too salty, dilute with unsalted broth and adjust the other flavors; a potato is not a reliable way to remove salt.
