Pour pasteurized cider or juice into a saucepan and add cinnamon sticks. Heat until steaming, then reduce to low and gently infuse for 15–20 minutes.
Tip: Do not use unpasteurized cider; a gentle warming recipe is not a validated pasteurization process.
Lift out the cinnamon sticks with tongs. Taste and serve warm in heat-safe mugs, about 1 cup each.
Tip: No sugar or alcohol is added. The drink still contains naturally occurring sugars.
For extended service, keep hot at 140°F or higher and monitor with a thermometer. Otherwise refrigerate promptly in suitable containers.
Tip: Do not leave a barely warm pot on the counter for the afternoon.
